What I Ate Today.

This morning I woke up feeling extra creative so I played around with a pancake recipe and let me just tell you...I'm extremely proud of the outcome! :) Not only were the pancakes delicious but it was like my first official recipe for me to make up that I actually really liked lol. I'm all about using ingredients that are as practical as possible and this recipe is definitely just that.

What you'll need:

  • 1/2 cup Old Fashion Rolled Oats (crumble until it looks powdery; I just used my hands)
  • 1 apple (thinly chopped)
  • 1 banana (mashed)
  • 1 egg & 1 egg white
  • As much Cinnamon that your little heart desires ;)
What you'll do:
  1. In a medium sized bowl mix all ingredients together.
  2. Place batter on a lightly greased skillet.
  3. Cook until brown on each side.
  4. Think to yourself..."Wow, that was easy."
It should make about 6 small-medium sized pancakes.
I added a little bit of honey to the top of mine, but it would also be really good with melted pb!

They're really filling, I ate three and was full!

For lunch today I had leftover chicken salad my mom made for dinner last night. It was sooo good and light, but I unfortunately don't have the recipe. But, I do have a little cutting calorie tip for you. Remember when you were a child and you were taught to "Just Say No," well use that lesson you learned and "Just Say NO" to that dang croissant when it's calling your name. Grab a lettuce leaf instead, you'll cut so many unnecessary calories! I suggest doing this with any type of sandwich you eat. 
Oh and I can't forget these little guys.. 
Snow peas are my new fav veggie :)

Tonight I had a salad from my favorite place ever, Jason's Deli. I usually don't eat meat everyday and on days that I do I only eat it once. I had chicken salad for lunch so dinner is all clean eatin veggies!

Oatmeal Banana Bread

I don't know about y'all but I love to bake and I love me some banana bread. The recipe that I usually use has like 1 1/2 cups sugar in it and that's just not okay. When I found this recipe on Pinterest I just new I had to give it a try. First of all, it's super easy to make and second, the ingredients aren't bizarre and un heard of like a lot of healthy dessert recipes I have found. I seriously had all the ingredients on the list already at home.


What You’ll Need:
2 whole, ripe bananas
1 large egg, beaten
3/4 cup milk
1 cup whole wheat flour
1 ¼ cup old-fashioned rolled oats
1/2 cup + 1 tablespoon packed brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 ½ teaspoon pumpkin pie spice (I used cinnamon, and I'm kind of obsessed with it so I used a lot lol)
1 tablespoon butter, melted
1/2 cup dried cranberries (I chopped up half an apple instead)

Preheat oven to 350 degrees.

For the Topping: In a small bowl, combine 1/4 cup oats, 1/8 teaspoon pumpkin pie spice, ¼ teaspoon cinnamon, 1 tablespoon brown sugar, and 1 tablespoon melted butter; set aside.

For the Bread: Mash bananas in a medium bowl, then stir in egg and milk. Add the flour, baking soda, baking powder, salt, 1 cup oats, ½ cup brown sugar, 1 teaspoon pumpkin pie spice. Stir just to combine (batter should be lumpy). Stir in cranberries.

Pour mixture into a lightly greased loaf pan or muffin tin, and sprinkle with topping mixture.

Bake at 350 degrees for 50 to 55 minutes. Loaf is done when a toothpick inserted in comes out clean or with some dry crumbs from the topping.






It came out super moist and delicious! I asked my Dad if he would eat it if I were to make it again and he said "Yes!" 
So now I know it really is good! :)

A New Me :)




So I was contemplating on what I wanted my first post to be and I thought...Hmmm might as well post the newest thing that's going on in my life duhh!! I recently cut all my hair off and let me tell you....the best decision I've made in a while! I'm feelin so light and sassy its great lol. One of my favorite actresses Julianne Hough cut hers off and I was so inspired.

Miley Cyrus also went out on a limb and cut off her long locks. She looks so fierce with her new do, and I admire her for wanting to be herself and I can't help but love her rocker style.

I agree with both Julianne and Miley when they say it's easy and can be messy. It's been sooooooo windy the past couple of days, more like weeks lol, and when I had long hair I would keep it in a pony on those days to keep it out of my face, now I wear it down and let the wind get all in it then just shake it around when I get back inside. Messier is definitely better!

So with that said, I encourge all you girls (or boys lol) to try something new! It doesn't have to be cutting your hair, it can be anything. I'm telling you, change is great!
